I love a good piece of warm cornbread! Doesn't it sound so yummy on a cold night, with some soup or crock-pot meat. I like it best when it is almost cake-like in texture and feeling. I am not a big fan of cornbread with a real cornmeal texture. I want it to be blended in and taste moist and fluffy! This recipe is just what I like.
My favorite Cornbread
1 cup cornmeal
3 cups flour
1 1/3 cups sugar
2 Tbs. baking powder
1 tsp. salt
2/3 cup oil
6 Tbs. melted butter
4 eggs
2 1/2 cups milk
Preheat your oven to 350 degrees. Mix the cornmeal, flour, sugar, baking powder and salt together in a big bowl. Make a well in the center of the dry ingredients and add the oil, butter, eggs and milk. Stir until it is just mixed. Bake in a 9x13 pan for 35 minutes.
Eat with lots of butter and honey. Enjoy!!
Delicious!!! I've made this for the last 3 years lol I know and I'm finally commenting... but seriously it's my go to. It's perfect and cake like. Everything I want in my cornbread! One thing I'd say is I've done it in both muffin tins and also.in a smaller 9X9 and it doesn't quite give the same moisture and lightness as when I use my high sided ceramic 5X9! The glass dish I used also made more of a brown crispy bottom so I didn't prefer that dish over my ceramic white baking dish! Hope this helps!

ReplyDeleteWhat kind of oil are you using?
ReplyDeleteI LOVE this recipe! I've just recently started my own blog and made this my first real post. Please let me know that that is okay, I gave credit to you and this blog in the post and at the bottom.

This is the only cornbread recipe I use! It's moist, tender and delicious! I substitute gluten free flour (Walmart brand) and it turns out great. I have a batch in the oven right now :)
